Café Aion: Elevating The Hill Since 2010

Opening its doors in 2010, Café Aion set out to bring something new to the University Hill neighborhood. Taking inspiration from the bistros and restaurants of Spain and France, Café Aion offers a comfortable atmosphere paired with flavorful, comforting dishes made with care. Over the years, it has become a go-to spot for a leisurely workday lunch, happy-hour celebration, pre-theater dinner or lingering glass of wine.

University of Colorado Connection!

Did you know Café Aion is a CU alumni-owned business? Owner and chef Dakota Soifer, class of ’03, studied architecture before heading into the restaurant world. Café Aion has been an important member of The Hill business community for more than 14 years, welcoming Buffs past and present. #gobuffs

Lunch Launches: The new lunch menu features some old favorites, including the BLT on baguette, Spanish Salmon Niçoise Salad, house-made Veggie Burger and Steak Frites.

Café Aion proudly serves local OZO coffee alongside a full bar of cocktails, Spanish and French wines, making it an ideal spot for a midday catch-up with friends or an out-of-office professional connection. Its intimate, sun-filled dining room offers a welcoming setting for everything from a quick lunch to a leisurely afternoon.

Weekend Brunch at Aion is the perfect place to kick-start the weekend or recover from a long week. House-made Bloody Marys, mimosas, bottles of bubbles and plenty of great eats set the vibe.

Fall Menu Highlights: As the evenings start to cool, the menu begins to embrace comforting and richer dishes. Leeks fondant and a squash-quinoa-tahini salad are new to tapas, while favorites like Beef Bourguignon and half roast chicken make a return to the entrée section.

Behind the bar, new wines by the glass include a rich Spanish Sauvignon Blanc and French Côtes du Rhône. Cocktails are also heading in a similar direction, with amaro-spiked creations and a drink featuring Spanish cocoa liqueur.
