Drinks, Dinner, Dessert? 3 easy recipes to satisfy all your quarantine cravings.

Quarantine, day #344. Or something like that. Who's counting?

And by now you've exhausted all four of your go-to recipes ten times over. It's time for a change but with limited supply capacity, what else is there to do? Below are three quick and easy Drink, Dinner and Dessert concoctions using things laying around the house to either spice up the family life or fatten up the single life. THERE IS NO IN BETWEEN!  


You have booze, and you have jam. Oddly enough, these two simple ingredients work just fine together to make a time-killing cocktail — even without the desperation of sobriety. 

Apricot Vodka
-2 tablespoons apricot (or peach) jam
-juice of half a lemon
-2 shots vodka

Gin 'n Jam
-2 tablespoons grape jam
-juice of half a lemon
-2 ounces gin

-2 tablespoons strawberry jam
-juice of half a lemon
-2 shots rum

For each drink: toss all ingredients in a Mason jar with ice and screw on lid tight. Shake vigorously until all chunks are gone. Serve in a glass and if you're feeling fancy garnish that bitch with a lemon wedge. 


The Quarandilla
Because of self-isolation, every hour on the hour feels like what 2:00 a.m. used to be; with a spinning head full of self-doubt probing wildly through the cabinets for a snack. To help, take this easy to assemble gem and do what you will with it.

-olive oil
-2 cloves garlic, minced
-handful of baby spinach
-large tortilla
-cream cheese
-shredded mozzarella

Heat oil in a pan and cook garlic for about 30 seconds. Toss in the handful of spinach and let cook. When wilted, scoop ingredients out and set aside. Place tortilla in the pan and brown on one side for an additional 30 seconds. Flip over, spread cream cheese on tortilla and then place spinach mixture on one-half of tortilla along with remaining shredded cheese. Cook for a few minutes or until you can't take it anymore and just want to eat to quiet the voices.

So now you're drunk on jam, bulging at the seams from the 'dilla, and now have a raging sweet tooth to quiet. Here it is folks, that cherry on top of the evening you've been waiting for. Who said quarantine couldn't satisfy?

-dab of butter
-whole milk (heavy whipping cream works best)
-bag of chocolate chips (or that leftover chocolate Halloween candy that's been staring at you for months)
-marshmallows (big or small, doesn't matter)
-graham crackers

In a small skillet melt a dab of butter until coated. Drop in some chocolate chips (or leftover chocolate candy sitting around) and a bit of milk or heavy cream. Cook on stovetop while stirring until melted. Then, place the marshmallows on top and put in a 350 degree oven until browned. Take out, serve with graham crackers. MIND BLOWN!
