You've often heard the generous maxim that "one man's trash is another's treasure" — and it isn't not true. 

However for Jan Campbell, an Irish avocado pit artist, it couldn't be more of a fitting proclamation. While eating one day, she marveled at the inside of her avocado at lunch and decided to carve it out into a character of Celtic folklore. The result was an intricate, highly wearable piece that she'd use as the inspiration for a future in jewelry design with Avocado Stone Faces. And according to her FAQs page, the one-of-a-kind pieces jet out the door just as fast as she can make them — with orders and inquiries into custom requests (of which she does not do) piling up by the day.
